"Stuffed Peppers A La Me!"

What the heck is a peck? You know...Peter Piper picked a peck of pickled peppers... Well, my peck consisted of 4 peppers. I plucked these lovely peppers from the free "Farmer's Market" a.k.a. my mom's backyard.







With my organically grown produce I made stuffed peppers. I started by mixing black beans, brown rice, baby portabella mushrooms and homemade salsa together.


I then spooned the mixture in to the peppers and sprinkled cheese on top.


I baked the stuffed peppers for about 30 minutes and BAM...stuffed peppers!

  3. Okay, so I am going to try a version of this tonight. Last night I made "Chicken Tacos" By that, what I mean is I cooked Ground Chicken...that I can only find at HEB. Threw in regular Taco Seasoning, diced onions and bell peppers, a can of black beans and threw in Rotel. Rolled up a fat one...A TORTILLA...and threw some cheese on top.

    Tonight, I am going to spoon that mix into some bell peppers and bake and see what that taste like!

  4. @ Laura...I baked these a night because it is hotter than hell here in Houston. LOL.

    @ Michelle...man I wished I lived close to a farmers market. Fresh produce tastes so much better than that crap at the grocery store.

    @GFS...LOL on a fat one. That's a good idea. I would have put meat in mind, but I forgot to take it out of the freezer. Let me know how they come out.

  5. okay, so I finally made the stuffed bell peppers and they were great. Try using ground chicken in your mix...it's more filling! Yum!
